Preserve Smart also states that roughly 12 pounds of fresh peaches yields only 1 to 1.5 pounds of dried fruit, and recommends a conditioning step afterward: placing the dried pieces loosely in a container filled about two-thirds full, covering it lightly, and shaking or stirring it daily for 4 to 10 days to even out any remaining moisture before longer storage, where properly stored dried fruit keeps well for 6 to 12 months.
